1 carrot
1 cup of cauliflower florets
1 green Pepper
1 large onion sliced (or 6 shallots peeled and cut into quarters)
11/2 teaspoon mustard seeds
4 cloves garlic peeled
2 cm piece ginger chopped
1/2 cup vinegar
1/4 teaspoon turmeric powder
1/8 teaspoon chilli powder
3 teaspoons salt
2 teaspoons sugar
50 grams Dates chopped
1 small tin pineapple pieces
1 semi-ripe mango chopped
Method
Cut carrot into julienne strips.
Break cauliflower into florets and steam for a few minutes.
Slice the green pepper and onion.
Grind together the mustard seeds, garlic and ginger in a little bit of the vinegar.
In a saucepan, put the ground paste and the balance of the vinegar, turmeric powder, chilli powder, salt and sugar and bring it to a boil and take it off the stove.
In a large bowl mix all the vegetables.
Then pour the boiled dressing and mix well.
When cool mix in the dates, pineapple pieces and the chopped mango and serve.
